   This is known as Chromakeying or ‘Greenscreen’
   You will need some good lighting (to light your greenscreen evenly), a good camera (To enable you to pull a clean key from it) and a high end tool that will allow colour keying.
   Adobe Premier, Adobe After Effects, Final Cut Pro and Sony Vegas all do this.
   However if you don’t want to spend much money there’s always something like Blender, T@B ZS4 or Wax, all of which are free.
   Be warned that it isn’t easy to get good results using any of these tools (after all the top folks in Hollywood are paid a fortune to do this all day), so try not to be too disappointed.
