I recently decided to turn on adsense after my post. The ads look great and content is awesome I just can’t see the impressions in Adsense. I have always used adsense code and inserts it into to certain areas and tracking no issue with channels. How can I track the impressions with adsense under my post, since you can’t pick a channel?

It is not true you cannot pick a channel. You can create a channel and name it UNDER POST or something to this effect
However, you cannot automatically (or use the wizard) to do it. The wizard does not offer channels for it. You have to go in and open the code of your template, then find where Adsense under posts are placed and replace it with the code that has the channel
To track your ads below ur post, u have to create ad unit with channels directly from your adsense account. You cannot track ads performance if u add ur adsense unit from ur blogger widgets… For example u can see my blog http://economy-online.blogspot.com where i have place ad unit under post.
