I would like to take notes for my Calculus class with my laptop. I want a software that can easily allow the note taker to draw graphs or type math symbols.

You can do note taking in MS Word but the Equation editor is a little cumbersome.
To take notes, work problems, etc., etc., I highly recommend MathCAD. The student version is reasonably priced. It allows you to do just about any type of math you want including plots and programming. Check it out.
