Okay so I have at least 3000 slots/shots on my memory card that had 700+ pics deleted. I saved at least 90% of those pics and videos but there are only a few I’d like to save with a photo recovery software and card reader.
The question is, say I took 100 NEW pics. Would that rewrite over the OLD 100 pic files that may still exist on the card if I go to try to recover those old files? (I believe I’ve saved those files on the PC before they were accidentally deleted.)

Just like on your hard drive, when you format it, or delete a file, only the index is changed. The recovery program tries to rebuild that.
But once you start saving more file(s), they may take up the allotted room. A few bytes missing from a file might render it unusable.
This depends on your camera and even to a degree on the memory card. Certainly with an older camera and an older card it will start writing new data (in this case photos) to the first available spaces on the memory card. In which case you’ll not be able to recover those first photos.
However there are cards and cameras that write in revolving cycles working through the memory on the device (this is different to how most disc type devices work), by working this way the life-cycle of the memory device can be extended. If this is how your device works you may or may not have more luck.
In future just save the photo’s somewhere!
